Here’s a flavorful recipe for Dum Aloo, a popular Indian dish featuring spiced baby potatoes cooked in a rich gravy.

1. Ingredients

For the Dum Aloo:

– 500 grams baby potatoes (or small potatoes)
– 3 tablespoons oil or ghee
– 1 teaspoon cumin seeds
– 1 medium onion, finely chopped
– 1 tablespoon ginger-garlic paste
– 2 medium tomatoes, pureed
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder (adjust to taste)
– 1 teaspoon coriander powder
– 1 teaspoon garam masala
– Salt to taste
– Fresh coriander leaves for garnish

For the Marinade:

– 1/2 cup yogurt (preferably whisked)
– 1 teaspoon cumin powder
– 1 teaspoon Kashmiri red chili powder (for color)
– 1/2 teaspoon garam masala

2. Instructions

Step 1- Prepare the Potatoes:

– Boil the baby potatoes in salted water until fork-tender (about 10-15 minutes). Drain and let them cool.
– Once cooled, peel the potatoes and prick them all over with a fork to help them absorb the flavors.

Step 2- Marinate the Potatoes:

– In a bowl, mix the yogurt, cumin powder, Kashmiri red chili powder, and garam masala. Add the pricked potatoes and coat them well. Let them marinate for at least 30 minutes.

Step 3- Cook the Gravy:

– In a heavy-bottomed pan, heat the oil or ghee over medium heat. Add the cumin seeds and let them splutter.
– Add the chopped onions and sauté until they turn golden brown.
– Stir in the ginger-garlic paste and sauté for a minute until fragrant.
– Add the tomato puree and cook until the oil starts to separate from the mixture.

Step 4- Add Spices:

– Stir in the turmeric powder, red chili powder, coriander powder, and salt. Cook for a couple of minutes until the spices are well blended.

Step 5- Combine and Cook:

– Add the marinated potatoes to the gravy, gently mixing to coat them with the spices.
– Cover the pan and let it cook on low heat for about 15-20 minutes, allowing the flavors to meld together. You can add a splash of water if the gravy is too thick.

Step 6- Finish and Serve:

– Once done, sprinkle garam masala on top and mix gently.
– Garnish with fresh coriander leaves.
