2-3 Thai red chilies (optional, for extra spice)
1 teaspoon coriander powder
1 teaspoon cumin powder

1 onion, sliced
1 bell pepper (red/yellow/green), sliced
1 carrot, thinly sliced
½ cup broccoli florets
½ cup baby corn, chopped
1 cup mushrooms, sliced
1 cup protein (tofu, chicken, shrimp, or paneer)
1 can (400ml) coconut milk
1 cup vegetable or chicken broth
1 tablespoon soy sauce
1 tablespoon fish sauce (optional for non-vegetarian)
1 teaspoon brown sugar or palm sugar
Juice of ½ lime
Fresh basil or Thai basil leaves for garnish
Step-by-Step Recipe
Step 1: Prepare the Thai Curry Paste
If using store-bought paste, skip this step. Otherwise, blend garlic, ginger, lemongrass, Thai chilies, coriander powder, and cumin powder into a smooth paste.
Step 2: Saute the Aromatics
Heat oil in a pan over medium heat. Add sliced onions and sauté until soft. Stir in the Thai curry paste and cook for 1-2 minutes until fragrant.
