Ragi Chicken Soup is a nutritious dish designed to boost metabolism. It combines ragi flour, which is rich in fiber and minerals, with tender chicken and vegetables for a healthy meal. The soup is prepared by sautéing onions, garlic, and chicken, then simmering with carrots and broth. Ragi flour is mixed with water to create a smooth paste, which thickens the soup. Ingredients:

  • 2 tbsp ragi flour (finger millet flour)
  • 200 grams of chicken (boneless, diced)
  • 1 small onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 small carrot (diced)
  • 1/2 tsp black pepper
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 1 tbsp olive oil or ghee
  • 4 cups chicken broth or water
  • Salt to taste
  • Fresh coriander leaves for garnish

Steps:

  1. Prepare the Chicken:
    • Heat 1 tbsp of oil or ghee in a large pot on medium heat. Add cumin seeds and bay leaf, letting them splutter.
    • Add the minced garlic and chopped onion. Sauté until the onions turn translucent, about 3-4 minutes.
    • Add the diced chicken to the pot and cook for 5-7 minutes until browned on all sides.
  2. Add Vegetables and Spices:
    • Add diced carrots to the chicken and continue to sauté for another 2-3 minutes. This adds flavor and nutrition to the soup.
    • Sprinkle black pepper and salt to season the mixture.
  3. Prepare the Ragi Mixture:
    • In a separate bowl, mix 2 tbsp of ragi flour with a little water to make a smooth, lump-free paste. This will act as the thickener for the soup.
  4. Simmer the Soup:
    • Pour the chicken broth or water into the pot with the chicken and vegetables. Bring it to a boil, then reduce the heat to simmer.
    • Slowly pour the ragi paste into the pot, stirring continuously to avoid lumps forming. Let the soup simmer for about 15-20 minutes until the chicken is fully cooked, and the soup thickens.
  5. Finish and Serve:
    • Once the soup has thickened and the chicken is tender, taste for seasoning and adjust salt if needed.
    • Garnish with fresh coriander leaves and serve the soup hot. You can also add a squeeze of lemon juice for added freshness.
