Chicken Ghee Roast is a rich and flavorful South Indian dish known for its aromatic spices and the unique flavor of ghee. The dish features tender chicken cooked in a spicy and savory sauce made with ghee, spices, and sometimes yogurt. Here’s a detailed recipe for making Chicken Ghee Roast:

1. Ingredients

For the Marinade:

– 500 grams (about 1 pound) chicken pieces (boneless or with bones)
– 1/2 cup plain yogurt (preferably full-fat or Greek yogurt)
– 1 tablespoon ginger-garlic paste
– 1 tablespoon red chili powder (adjust to taste)
– 1/2 teaspoon turmeric powder
– 1 teaspoon coriander powder
– Salt to taste

For the Roast:

– 3 tablespoons ghee (clarified butter)
– 1 teaspoon mustard seeds
– 1 teaspoon cumin seeds
– 1/2 teaspoon fenugreek seeds (optional)
– 1/2 teaspoon black peppercorns
– 1-2 dried red chilies (adjust to taste)
– 1 large onion, finely chopped
– 1 tablespoon ginger-garlic paste
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder (adjust to taste)
– 1 teaspoon coriander powder
– 1 teaspoon garam masala
– 1/2 cup water (or as needed)
– Fresh coriander leaves for garnish
– Lemon wedges for serving

2. Instructions:

Step 1- Marinate the Chicken:

– In a large bowl, combine the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, and salt.
– Mix well to coat the chicken evenly.
– Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.

Step 2- Prepare the Roast:

– Heat 3 tablespoons of ghee in a large pan or skillet over medium heat.
– Add mustard seeds, cumin seeds, fenugreek seeds (if using), black peppercorns, and dried red chilies. Let them splutter for a few seconds.
– Add the finely chopped onion and sauté until it turns golden brown.
– Add the ginger-garlic paste and sauté for another 2 minutes until the raw smell disappears.
– Add turmeric powder, red chili powder, coriander powder, and garam masala. Stir well for a minute to combine the spices with the onion mixture.

Step 3- Cook the Chicken:

– Add the marinated chicken to the pan, along with any marinade left in the bowl.
– Stir well to coat the chicken with the spice mixture.
– Cook over medium heat, stirring occasionally, until the chicken is cooked through and tender (about 15-20 minutes). Add water if needed to prevent the spices from burning and to help cook the chicken.
– Adjust the seasoning with salt and more red chili powder if desired.

Step 4- Finish and Serve:

– Once the chicken is cooked and the sauce has thickened to your desired consistency, garnish with fresh coriander leaves.
– Serve hot with lemon wedges on the side.
