Veg seekh kebabs are a delicious vegetarian alternative to traditional seekh kebabs. Here’s a recipe you can try:

1. Ingredients

For the Kebabs:

– 1 cup mixed vegetables (carrot, beans, peas, corn), finely chopped or grated
– 1 cup paneer (Indian cottage cheese), crumbled
– 2-3 tablespoons besan (gram flour)
– 1 medium onion, finely chopped
– 2-3 green chilies, finely chopped (adjust to taste)
– 1 tablespoon ginger-garlic paste
– 1 teaspoon cumin seeds
– 1 teaspoon coriander powder
– 1 teaspoon garam masala
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 2 tablespoons chopped fresh coriander leaves
– 1 tablespoon lemon juice
– Salt to taste
– 2-3 tablespoons oil for brushing

For Marination:

– 1/2 cup yogurt
– 1 tablespoon ginger-garlic paste
– 1 teaspoon turmeric powder
– 1 teaspoon cumin powder
– 1 teaspoon coriander powder
– 1 teaspoon red chili powder
– 1 teaspoon garam masala
– Salt to taste

2. Instructions

Step 1- Prepare the Vegetables:

– Boil or steam the mixed vegetables until tender. Drain and let them cool.
– Once cooled, mash or finely chop the vegetables.

Step 2- Prepare the Mixture:

– In a mixing bowl, combine the mashed vegetables, crumbled paneer, and besan.
– Add finely chopped onions, green chilies, ginger-garlic paste, and the spices (cumin seeds, coriander powder, garam masala, turmeric powder, red chili powder).
– Mix well. Adjust salt and spices as needed.
– Add fresh coriander leaves and lemon juice. Mix everything thoroughly.
– If the mixture is too soft, add more besan to bind it.

Step 3- Shape the Kebabs:

– Divide the mixture into small portions.
– Shape each portion into a cylindrical or oval shape, similar to traditional seekh kebabs.
– You can use skewers or your hands to shape them.

Step 4- Marinate:

– In a separate bowl, prepare the marinade by mixing yogurt with ginger-garlic paste and spices.
– Coat each kebab with the marinade. Let them marinate for at least 30 minutes to an hour.

Step 5- Cook the Kebabs:

– Preheat your oven to 200°C (390°F) or preheat a grill.
– Brush the kebabs lightly with oil.
– Place the kebabs on a baking tray or grill. Bake for 20-25 minutes, turning them occasionally and basting with more oil if needed. Alternatively, you can pan-fry them in a little oil until golden brown and crisp on all sides.

Step 6- Serve:

– Serve the veg seekh kebabs hot with mint chutney, yogurt sauce, and sliced onions and lemon wedges.
