Chapli kebabs are a popular Pakistani and Afghan dish known for their flavorful and aromatic profile. They are made from minced meat (usually beef or lamb) mixed with spices, herbs, and sometimes vegetables, then shaped into patties and shallow-fried. Here’s a classic recipe for chapli kebabs:

1. Ingredients

For the Kebabs:

– 500 grams minced beef or lamb (with some fat for juiciness)
– 1 large onion, finely chopped
– 2-3 green chilies, finely chopped (adjust to taste)
– 1 tablespoon ginger-garlic paste
– 1 tablespoon coriander seeds, crushed
– 1 teaspoon cumin seeds, crushed
– 1 teaspoon red chili powder
– 1 teaspoon turmeric powder
– 1 teaspoon garam masala
– 1/2 teaspoon black pepper
– 1/2 teaspoon dried pomegranate seeds (anardana), crushed (optional but recommended for authentic flavor)
– 1/4 cup fresh coriander leaves, chopped
– 1/4 cup fresh mint leaves, chopped
– 1 large tomato, finely chopped
– 1 egg, beaten (for binding)
– Salt to taste

For Cooking:

– Vegetable oil (for shallow frying)

2. Instructions

Step 1- Prepare the Mixture:

– In a large bowl, combine the minced meat, finely chopped onion, green chilies, ginger-garlic paste, crushed coriander seeds, crushed cumin seeds, red chili powder, turmeric powder, garam masala, black pepper, and dried pomegranate seeds (if using).
– Add the chopped fresh coriander and mint leaves, and the finely chopped tomato. Mix everything together until well combined.
– Beat the egg and add it to the mixture to help bind the kebabs. Season with salt to taste. Mix well until the mixture is homogeneous.

Step 2- Shape the Kebabs:

– Take small portions of the mixture and shape them into round or oval patties, about 1/2-inch thick. You can also flatten them slightly to resemble traditional kebabs.

Step 3- Cook the Kebabs:

– Heat vegetable oil in a skillet or frying pan over medium heat.
– Carefully place the kebabs in the hot oil, making sure not to overcrowd the pan. Fry them in batches if necessary.
– Cook the kebabs for about 4-5 minutes on each side, or until they are golden brown and cooked through. They should have a nice crispy exterior.

Step 4- Serve:

– Remove the kebabs from the skillet and drain them on paper towels to remove excess oil.
– Serve hot with naan, chapati, or rice. They are often accompanied by yogurt sauce, chutney, and salad.
