Here’s a simple and tasty recipe for delicious vegetable spring rolls:

1. Ingredients

For the Filling:

– 1 cup shredded cabbage
– 1 cup julienned carrots
– 1/2 cup thinly sliced bell peppers (any color)
– 1/2 cup thinly sliced mushrooms
– 1/2 cup bean sprouts (optional)
– 2 cloves garlic, minced
– 1 tablespoon fresh ginger, minced
– 2 tablespoons soy sauce
– 1 tablespoon hoisin sauce (optional)
– 1 teaspoon sesame oil
– 1 tablespoon vegetable oil (for stir-frying)
– Salt and pepper to taste

For the Spring Rolls:

– 12-15 spring roll wrappers
– A small bowl of water (to seal the wrappers)

For Frying:

– Vegetable oil (enough for deep frying)

2. Instructions

Step 1- Prepare the Filling:

– Heat the vegetable oil in a large skillet or wok over medium heat.
– Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
– Add the shredded cabbage, carrots, bell peppers, and mushrooms. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
– Add the bean sprouts if using.
– Stir in the soy sauce, hoisin sauce (if using), and sesame oil. Cook for an additional 1-2 minutes.
– Season with salt and pepper to taste.
– Remove from heat and let the filling cool slightly.

Step 2- Assemble the Spring Rolls:

– Lay a spring roll wrapper on a clean surface, with one corner pointing toward you (like a diamond shape).
– Place about 2-3 tablespoons of the vegetable filling in the center of the wrapper.
– Fold the bottom corner over the filling, then fold in the sides, and roll up tightly. Use a little water to seal the top edge of the wrapper.
– Repeat with the remaining wrappers and filling.

Step 3- Fry the Spring Rolls:

– Heat enough vegetable oil in a deep pan or wok to submerge the spring rolls, to about 350°F (175°C).
– Carefully slide a few spring rolls into the hot oil (don’t overcrowd the pan) and fry for about 3-4 minutes or until golden brown and crispy.
– Use a slotted spoon to remove the spring rolls and drain them on paper towels.

Step 4- Serve:

– Serve the spring rolls hot with your favorite dipping sauce, such as sweet chili sauce, soy sauce, or a combination of soy sauce and vinegar.
