Grind Mint & Ginger: In a small blender jar, combine fresh mint leaves and grated ginger with a splash of water. Grind to a smooth paste. This gives the jaljeera its signature freshness and a spicy kick.

Mix the Spices: In a large mixing bowl or jug, add 1 tbsp roasted cumin powder, 1 tsp black salt, ½ tsp regular salt, 1 tsp amchur, ½ tsp black pepper and 1 tbsp lemon juice.
