Dhokla is a traditional Gujarati snack made from besan, semolina, and mild spices. Prepare the Batter

Step 1: Make the Batter Mix besan, semolina, turmeric, salt, sugar, ginger-chili paste, lemon juice, and oil in a bowl. Add water gradually to make a smooth batter and let it rest for 10-15 minutes.

Step 3: Steam the Dhokla Grease a plate, pour in the batter, and steam for 15-20 minutes. Check with a knife if it comes out clean, it's done. Let it cool slightly before cutting.

Step 4: Add Tempering Heat oil, add mustard seeds, sesame seeds, green chilies, and curry leaves. Add water and sugar, bring to a boil, then pour over the dhokla.
