Prepare the Dosa Batter: If you're using store-bought batter, ensure it's at room temperature. If homemade, blend soaked rice and urad dal into a smooth batter, ferment it overnight, and stir it before use.
Prepare the Onion Topping: mix finely chopped onions, green chilies, and coriander leaves in a bowl. You can add a pinch of salt if desired.
Heat the Pan: heat a non-stick or cast-iron tawa on medium heat. Once hot, pour a ladleful of dosa batter onto the pan and spread it in a circular motion to form a thin layer.
Add Onion Mixture: immediately sprinkle the onion, green chili, and coriander mixture evenly over the dosa while the batter is still wet. Gently press it down with a spatula so it sticks to the dosa.
