- ½ teaspoon garam masala
- 1 teaspoon lemon juice
- Salt to taste
- Water (as needed, to moisten the filling)
For Cooking Parathas:
- Ghee or oil (as needed)
Step-by-Step Process
Step 1: Prepare the Dough
- In a large bowl, mix whole wheat flour and salt.
- Gradually add water and knead into a smooth, soft dough.
- Apply a little oil or ghee to the dough and knead again for 2-3 minutes.
- Cover the dough with a damp cloth and let it rest for 20-30 minutes.
Step 2: Prepare the Sattu Filling
- In a mixing bowl, add sattu flour.
- Mix in finely chopped onions, garlic, ginger, and green chilies.
- Add ajwain, kalonji, cumin, fennel, red chili powder, garam masala, and salt.
- Pour in mustard oil and mix well to combine all the flavors.
- Sprinkle some lemon juice and coriander leaves for freshness.
- Add a few drops of water to moisten the mixture slightly (but do not make it too wet).
Step 3: Stuff and Roll the Parathas
- Divide the dough into equal-sized balls.
- Roll out a ball into a small circle (about 4 inches in diameter).
- Place 2-3 tablespoons of the sattu filling in the center.
- Gather the edges and seal the dough into a round pouch.
- Gently flatten and roll it again into a paratha (about 6-7 inches in diameter).
Step 4: Cook the Parathas
- Heat a tawa or griddle over medium-high heat.
- Place the rolled-out paratha on the hot tawa.
- Cook for 1-2 minutes, then flip to the other side.
- Apply ghee or oil on both sides and cook until golden brown, pressing gently with a spatula.
- Once crisp and golden, remove from the tawa.
Step 5: Serve and Enjoy
- Serve hot Sattu Paratha with curd, pickles, or green chutney.
- You can also pair it with baingan bharta or a glass of fresh buttermilk for a complete meal.
Tips for Perfect Sattu Paratha:
- Always knead the dough well and let it rest for soft parathas.
- Do not over-moisten the filling; it should be slightly dry to avoid breaking while rolling.
- Mustard oil enhances the authentic taste, but you can replace it with ghee if needed.
- Adjust the spice levels as per your preference.
Enjoy your delicious and protein-rich Sattu Paratha, a healthy and filling meal straight from Bihar’s traditional kitchen.
