Here’s a simple and delicious recipe for Zucchini Sabji, a flavorful Indian-style zucchini curry that makes for a quick and satisfying meal.
– 2 medium zucchinis, sliced or diced
– 2 tbsp oil (vegetable or mustard oil)
– 1 tsp cumin seeds
– 1/2 tsp mustard seeds (optional)
– 1/2 tsp turmeric powder
– 1 tsp cumin powder
– 1 tsp coriander powder
– 1/2 tsp red chili powder (adjust to taste)
– 1/2 tsp garam masala
– 1 medium onion, finely chopped
– 1 medium tomato, chopped
– 1 green chili, slit lengthwise (optional, for heat)
– Salt to taste
– Fresh cilantro for garnish
– Heat oil in a large pan or skillet over medium heat.
– Add cumin seeds and mustard seeds (if using) to the hot oil. Let them splutter.
– Add the chopped onions and green chili (if using). Sauté until the onions become translucent and start to turn golden brown.
– Stir in the chopped tomatoes and cook until they soften and begin to break down.
– Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Cook for a few minutes until the tomatoes are well combined with the spices.
– Add the diced or sliced zucchini to the pan. Stir well to coat the zucchini with the spice mixture.
– Cover and cook on medium-low heat for about 8-10 minutes, or until the zucchini is tender but still slightly crisp. Stir occasionally to ensure even cooking.
– Once the zucchini is cooked to your liking, add garam masala and stir to combine. Cook for another 2 minutes.
– Garnish with fresh cilantro.
– Serve hot with roti, chapati, or rice.
