Coconut macaroons are delightful little treats known for their chewy texture and rich coconut flavor. Here’s a straightforward recipe for coconut macaroons:

1. Ingredients

– 2 2/3 cups shredded sweetened coconut (unsweetened coconut can be used but add a bit of sugar to taste)
– 1/2 cup granulated sugar
– 1/4 cup all-purpose flour
– 1/4 teaspoon* salt
– 2 large egg whites
– 1 teaspoon vanilla extract

2. Optional for Drizzling

– 1/2 cup semisweet or dark chocolate chips (for melting and drizzling)

3. Instructions

Step 1- Preheat Oven:

Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2- Mix Dry Ingredients:

In a large bowl, combine the shredded coconut, granulated sugar, flour, and salt. Mix well to evenly distribute the sugar and flour.

Step 3- Whisk Egg Whites:

In a separate bowl, use an electric mixer to beat the egg whites until they form stiff peaks. This means the egg whites should be firm and hold their shape when you lift the beaters.

Step 4- Combine Ingredients:

Gently fold the beaten egg whites into the coconut mixture until well combined. Add the vanilla extract and mix until everything is evenly incorporated.

Step 5- Shape Macaroons:

Use a small cookie scoop or spoon to drop rounded mounds of the mixture onto the prepared baking sheet. Space them about 1 inch apart as they won’t spread much.

Step 6- Bake:

Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown. The centers should be set but still soft.

Step 7- Cool and Optional Chocolate Drizzle:

Allow the macaroons to cool completely on the baking sheet. If desired, melt the chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the cooled macaroons.

Enjoy your coconut macaroons! They are a deliciously chewy treat with a touch of sweetness.
