To make Garlic Broccoli Sabji, first clean and blanch broccoli florets to keep them tender and bright green. Sauté cumin seeds, garlic, onions, and green chili in oil until fragrant, then add tomatoes and spices like turmeric, red chili powder, and coriander powder. After the masala is ready, stir in the broccoli and cook for a few minutes, letting it absorb the flavors. Cover and cook on low heat until the broccoli is tender but not mushy. Finally, add a squeeze of lemon juice and garnish with fresh coriander. Serve hot with roti, paratha, or rice.

Ingredients:

  • 1 large broccoli head (cut into florets)
  • 1 tablespoon oil (olive oil or vegetable oil)
  • 6-8 garlic cloves (finely chopped)
  • 1 teaspoon cumin seeds (jeera)
  • 1 small onion (finely chopped)
  • 1 small tomato (chopped)
  • 1 green chili (optional, finely chopped)
  • 1/2 teaspoon turmeric powder (haldi)
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder (dhania)
  • Salt to taste
  • 1 teaspoon lemon juice
  • Fresh coriander leaves for garnish

Step By Step Instructions:

Step 1: Prepare the Broccoli

  • Wash the broccoli thoroughly and cut it into medium-sized florets. Soak the florets in salted water for about 5 minutes to clean them and get rid of any dirt or small insects.
  • Drain the broccoli and set it aside.

Step 2: Blanch the Broccoli (Optional, for Tenderness)

  • Boil a pot of water and add a pinch of salt. Add the broccoli florets to the boiling water and cook for 2-3 minutes until they turn bright green and slightly tender.
  • Drain the florets and immediately transfer them to ice-cold water to stop the cooking process. This blanching step helps retain the color and texture of the broccoli.
  • Drain again and set the broccoli aside.

Step 3: Prepare the Masala Base

  • Heat oil in a wide pan or kadhai over medium heat. Once the oil is hot, add cumin seeds and let them splutter for a few seconds.
  • Add the finely chopped garlic and green chili (if using). Sauté until the garlic turns golden brown and fragrant. This garlic flavor will be the base of the dish.
  • Now, add the finely chopped onion and sauté until it turns soft and translucent.

Step 4: Cook the Broccoli with Spices

  • Add the chopped tomato to the pan and cook until it becomes soft and the oil starts to separate. You can also mash the tomato slightly to form a smoother base.
  • Now, add turmeric powder, red chili powder, coriander powder, and salt. Stir well to combine and cook the spices for 1-2 minutes to remove the raw taste.
  • Add the blanched broccoli florets to the pan and mix them well with the garlic masala mixture. Stir-fry the broccoli on medium heat for 3-4 minutes, coating it evenly with the spices.

Step 5: Final Touch and Garnishing

  • Cover the pan with a lid and let the broccoli cook on low heat for another 2-3 minutes, allowing it to absorb all the flavors. Make sure the broccoli remains tender but not overcooked or mushy.
  • Once the broccoli is cooked, turn off the heat and squeeze in some fresh lemon juice for a tangy flavor.
  • Garnish with freshly chopped coriander leaves.

  • Blanching Broccoli: Blanching the broccoli helps retain its bright green color and makes it tender, but this step is optional.
  • Garlic Flavor: The more garlic you use, the more intense the flavor will be. Adjust garlic quantity to your taste.
  • Spice Levels: You can adjust the amount of green chili and red chili powder depending on how spicy you like your sabji.
  • Cooking Time: Avoid overcooking the broccoli to maintain its crunchy texture and prevent it from becoming mushy.
