Kaju curry is a delicious, restaurant-style dish made with golden roasted cashews cooked in a smooth onion-tomato gravy. The dish is seasoned with a blend of aromatic spices like cumin, coriander, and garam masala. Fresh cream enhances its creamy texture, while kasuri methi adds a unique flavor. The roasted cashews provide a delightful crunch. This curry is easy to prepare and works beautifully with Indian breads or rice. It’s a hearty meal perfect for special occasions or everyday indulgence.

Ingredients:

  • 1 cup cashew nuts (kaju)
  • 2 medium onions (finely chopped)
  • 2 medium tomatoes (pureed)
  • 1 tbsp ginger-garlic paste
  • 1/4 cup fresh cream
  • 2-3 tbsp oil or ghee
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/4 tsp kasuri methi (dried fenugreek leaves)
  • 1 cup water
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

Step 1: Roast the Cashews

  • Heat 1 tbsp of oil or ghee in a pan.
  • Add the cashews and roast them on low heat until they turn golden brown. Remove and set aside.

Step 2: Saute the Aromatics

  • In the same pan, heat 2 tbsp oil or ghee.
  • Add cumin seeds and let them splutter.
  • Add finely chopped onions and sauté until they turn golden brown.
  • Stir in the ginger-garlic paste and cook for another minute until aromatic.

Step 3: Prepare the Base

  • Add the tomato puree to the pan and cook until the oil separates from the mixture.
  • Mix in turmeric powder, red chili powder, coriander powder, and salt. Stir well.

Step 4: Blend the Gravy (Optional for Smooth Texture)

  • Let the mixture cool slightly.
  • Blend the cooked onion-tomato mixture into a smooth paste, then return it to the pan.

Step 5: Add Cashews and Cream

  • Stir in the roasted cashews and 1 cup of water. Mix well to combine.
  • Let it simmer for 5 minutes on low heat.
  • Add fresh cream and garam masala. Mix gently and cook for another 2-3 minutes.

Step 6: Enhance the Flavor

  • Crush kasuri methi between your palms and sprinkle it into the curry.
  • Stir well and let the flavors meld for another minute.

Step 7: Garnish and Serve

  • Garnish with fresh coriander leaves.
  • Serve hot with naan, roti, or steamed rice.
