1.Ingredients
For Bhallas:
- 1 cup urad dal
- Salt to taste
- 1 inch piece of ginger, grated
- 2 green chilies, finely chopped
- Oil for frying
For Serving:
- 2 cups thick yogurt, beaten
- 1/2 teaspoon roasted cumin powder
- 1/2 teaspoon red chili powder
- Salt to taste
- Tamarind chutney or sweet date chutney
- Chopped fresh coriander leaves
- Sev (optional, for garnish)

Step1-Prepare the Bhallas:
- Soak the urad dal in water for 4-5 hours or overnight.
- Drain the dal and grind it into a smooth batter using very little water.
- Add salt, grated ginger, and chopped green chilies to the batter and mix well.
- Heat oil in a deep frying pan or kadhai over medium heat.
- Take small portions of the batter and gently drop them into the hot oil using wet hands or a spoon.
- Fry until the bhallas are golden brown and crisp. Remove from oil and drain excess oil on paper towels.
Step2-Prepare Dahi Mixture:
- Beat the thick yogurt until smooth.
- Add salt, roasted cumin powder, and red chili powder. Mix well.
Step3-Assemble Dahi Bhalla:
- Soak the fried bhallas in lukewarm water for about 20-30 minutes until they become soft.
- Squeeze out the excess water gently by pressing each bhalla between your palms.
- Arrange the squeezed bhallas in a serving dish.
- Pour the beaten yogurt mixture evenly over the bhallas, covering them completely.
- Drizzle tamarind chutney or sweet date chutney on top according to taste.
- Garnish with chopped coriander leaves and sev (optional).
