- 1 onion, diced

- 1 red bell pepper, diced

- 2-3 garlic cloves, minced

- 1 teaspoon ground cumin

- 1 can (14 oz) diced tomatoes (or fresh tomatoes, chopped)

- 4-6 eggs

Step 1- Saut Vegetables:
