Introduction:

When the scorching sun beats down and sweat drips from your brow, there's nothing quite like a chilled glass of jaljeera to refresh and rejuvenate.

Ingredients:

  • 2 tablespoons cumin seeds
  • 1 tablespoon black peppercorns
  • 1 tablespoon dry mango powder (amchur)
  • 1 tablespoon black salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground mint leaves
  • 1 teaspoon ground coriander seeds
  • 1 teaspoon salt
  • 1 tablespoon tamarind pulp
  • 1 lemon, juiced
  • 2 tablespoons fresh coriander leaves, chopped
  • 1 tablespoon fresh mint leaves, chopped
  • Ice cubes
  • Water

Instructions:

STEP 1- Dry roast the cumin seeds and black peppercorns in a pan over low heat until fragrant. Let them cool down.

STEP 2- Grind the roasted cumin seeds and black peppercorns into a fine powder using a spice grinder or mortar and pestle.

STEP 3- In a large mixing bowl, combine the ground cumin and peppercorn mixture with dry mango powder, black salt, ground ginger, ground mint leaves, ground coriander seeds, and salt. Mix well.

STEP 4- Add tamarind pulp and lemon juice to the spice mixture. Mix until everything is well incorporated.

STEP 5- Gradually pour water into the spice mixture while stirring continuously to avoid lumps.

STEP 6- Taste the jaljeera and adjust the seasoning according to your preference by adding more salt or lemon juice if needed.

STEP 7- Chill the jaljeera in the refrigerator for at least 30 minutes to allow the flavors to meld together.

STEP 8- Before serving, stir in fresh coriander leaves and mint leaves for an extra burst of freshness.

STEP 9- Fill glasses with ice cubes and pour the chilled jaljeera over the ice.

STEP 10- Garnish with a sprig of mint or a slice of lemon, if desired.
