This gluten-free quinoa salad combines cooked quinoa with fresh vegetables like red bell pepper, cucumber, and red onion, dressed with a lemon-olive oil vinaigrette. Ingredients:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions:

1. Cook the Quinoa:
