Paneer Tikka is a popular Indian appetizer made from marinated paneer (Indian cottage cheese) that's grilled or baked. Here's a simple recipe to make it at home:

1. Ingredients

- Paneer (cottage cheese): 250 grams, cut into cubes

- Yogurt: 1 cup

- Lemon juice: 2 tablespoons

- Ginger-garlic paste: 1 tablespoon

- Red chili powder: 1 tablespoon

- Turmeric powder: 1/2 teaspoon

- Garam masala: 1 teaspoon

- Cumin powder: 1/2 teaspoon

- Coriander powder: 1/2 teaspoon

- Chaat masala: 1 teaspoon

- Kasuri methi (dried fenugreek leaves): 1 teaspoon (optional)

- Salt: to taste

- Oil: 2 tablespoons

- Bell peppers: 1-2, cut into chunks

- Onion: 1, cut into chunks

- Wooden skewers: soaked in water for 30 minutes

2. Instructions

Step 1- Prepare the Marinade:

- In a large bowl, mix the yogurt, lemon juice, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, coriander powder, chaat masala, kasuri methi, salt, and oil.

Step 2- Marinate the Paneer:

- Add the paneer cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour (or overnight for best results).

Step 3- Prepare the Vegetables:

- If using, toss the bell pepper and onion chunks with a little bit of oil, salt, and pepper.

Step 4- Skewer the Paneer and Vegetables:

- Thread the marinated paneer cubes, bell peppers, and onions alternately onto the soaked wooden skewers.

Step 5- Grill or Bake:

- Grilling: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for about 2-3 minutes on each side, or until the paneer has nice grill marks and is cooked through.

- Baking: Preheat your oven to 200 C (400 F). Place the skewers on a baking sheet lined with foil or parchment paper. Bake for 15-20 minutes, turning halfway through, until the paneer is slightly charred and cooked through. You can also use the broiler for a few minutes at the end for extra char.
