Here's a basic recipe for Mushroom Risotto:

1. Ingredients

- 1 cup Arborio rice

- 4 cups vegetable or chicken broth (keep warm)

- 1 cup sliced mushrooms (such as cremini or button mushrooms)

- 1/2 cup finely chopped onion

- 2 cloves garlic, minced

- 1/2 cup dry white wine (optional)

- 2 tablespoons butter

- 1/4 cup grated Parmesan cheese

- Salt and pepper to taste

- Fresh parsley or thyme for garnish (optional)

2. Instructions

Step 1- Prepare the Broth:

Heat the vegetable or chicken broth in a saucepan over medium heat until it simmers. Reduce the heat to low to keep it warm while you prepare the risotto.

Step 2- Saut the Mushrooms:

In a large skillet or saucepan, melt 1 tablespoon of butter over medium heat. Add the sliced mushrooms and cook until they are golden brown and tender, about 5-7 minutes. Remove the mushrooms from the skillet and set aside.

Step 3- Saut the Onions and Garlic:

In the same skillet, add another tablespoon of butter. Add the chopped onion and garlic, and cook until the onion is translucent and the garlic is fragrant, about 2-3 minutes.

Step 4- Toast the Rice:

Add the Arborio rice to the skillet with the onions and garlic. Stir to coat the rice with the butter and cook for 1-2 minutes until the rice becomes slightly translucent.

Step 5- Cook the Risotto:

Begin adding the warm broth to the rice mixture, one ladleful (about 1/2 cup) at a time. Stir frequently and allow each addition of broth to be absorbed before adding the next. This process will take about 18-20 minutes. The rice should be creamy and tender, with a slight bite (al dente) when done.

Step 6- Add Mushrooms:

About halfway through cooking the risotto (after about 10 minutes), stir in the saut ed mushrooms.

Step 7- Finish the Risotto:

Once all the broth has been absorbed and the rice is cooked to your desired consistency, remove the skillet from the heat. Stir in the grated Parmesan cheese and season with salt and pepper to taste.

Step 8- Serve:

Garnish the risotto with fresh parsley or thyme if desired, and serve immediately while hot.
