    • teaspoon cumin powder
    • teaspoon garam masala
    • 1 teaspoon red chili powder (adjust to taste)
    • Salt to taste
    • Fresh coriander leaves, chopped (for garnish)
    • Water as needed

Instructions

Step 1: Boil the Eggs

  • Place the eggs in a pot of water and bring to a boil.
  • Once boiling, let them cook for about 10-12 minutes.
  • Remove from heat, drain the hot water, and place the eggs in cold water to stop cooking. Peel the eggs and set aside.

Step 2: Marinate and Fry the Eggs

  • In a bowl, mix the turmeric powder, red chili powder, and salt.
  • Coat the boiled eggs with this marinade.
  • Heat oil in a pan over medium heat. Fry the marinated eggs until they are golden brown on all sides. Remove and set aside.

Step 3: Prepare the Korma Gravy

  • In the same pan, add 2 tablespoons of oil or ghee.
  • Once hot, add the bay leaf, cardamom pods, cloves, and cinnamon stick. Saut for a few seconds until fragrant.
  • Add the finely chopped onions and saut until they turn golden brown.
  • Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears.

Step 4: Add Tomatoes and Spices

  • Add the pureed tomatoes to the onion mixture and cook until the oil starts to separate (about 5-7 minutes).
  • Lower the heat and add the whisked yogurt gradually, stirring continuously to prevent curdling.
  • Once the yogurt is well incorporated, add the coriander powder, cumin powder, red chili powder, garam masala, and salt. Mix well.

Step 5: Combine Eggs and Finish Cooking

  • Add a little water to adjust the consistency of the gravy (you can make it as thick or thin as you prefer).
  • Gently add the fried eggs into the gravy and let them simmer for about 5-10 minutes to absorb the flavors.
  • Garnish with freshly chopped coriander leaves.

Step 6: Serve

  1. Serve hot with steamed rice, naan, or parathas. Enjoy your delicious Egg Korma!

Tips

  • You can adjust the spice levels according to your preference.
  • For added richness, you can add cream or cashew paste to the gravy.
