- Baby potatoes - 500g

- Green cardamom - 2-3
- Onion - 2 large, finely chopped
- Ginger-garlic paste - 1 tablespoon
- Tomato - 2 medium, pureed
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon (adjust to taste)
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Garam masala powder - 1/2 teaspoon
- Salt - to taste
- Fresh cream - 2 tablespoons (optional)
- Fresh coriander leaves - for garnish
2. Instructions
Step 1- Prepare the Potatoes:
- Wash the baby potatoes thoroughly. You can peel them or keep the skin on, as per preference.
- Prick the potatoes with a fork or make small cuts on them to ensure they cook evenly.
Step 2- Fry the Potatoes:
- Heat 2 tablespoons of oil in a pan over medium heat.
- Add the potatoes and fry them until they are golden brown and crispy on all sides. This step helps seal the potatoes and adds a nice texture. Remove them from the pan and set aside.
Step 3- Prepare the Gravy:
- In the same pan, add 1-2 tablespoons of oil if needed.
- Add cumin seeds, bay leaf, cinnamon stick, cloves, and green cardamom. Saute for a few seconds until fragrant.

- If using fresh cream, add it now and gently mix it into the gravy.
