1. Ingredients:

For the Bhindi:

- 250 grams (about 2 cups) of fresh okra (bhindi), washed and dried

- 2 tablespoons vegetable oil

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon mustard seeds

- 1/4 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- 1/2 teaspoon coriander powder

- Salt to taste

For the Yogurt Sauce:

- 1 cup plain yogurt (preferably full-fat or Greek yogurt)

- 1 tablespoon besan (gram flour) or rice flour (to thicken the yogurt sauce)

- 1/4 teaspoon asafoetida (hing) (optional)
