With its golden, crispy exterior and luscious filling, gujiya encapsulates the essence of holi. Follow this step-by-step guide to bring the magic of homemade gujiya to your dinner table.

INGREDIENTS

For the dough2 cups all-purpose flour (Maida)4 tablespoons ghee (clarified butter)Water as needed

For the filling1 cup khoya (reduced milk solids)1/2 cup powdered sugar 1/4 cup finely chopped almonds, cashews, and pistachios 2 tablespoons of cardamom powderA pinch of nutmeg powder A few saffron strands (optional)2 tablespoons of raisins or dried cranberries

For fryingGhee or oil for deep-frying

Step 1: Prepare the doughBy combining all-purpose flour and ghee in a mixing bowl. Gradually add water and knead the mixture into a smooth, firm dough. Let it rest for about 30 minutes.

Step 2: Prepare the fillingIn a separate bowl, mix together khoya, finely chopped nuts, powdered sugar,cardamom powder,nutmeg powder, and a pinch of saffron threads. Add a handful of raisins or dried coconut for extra sweetness and flavor.

Step 3: Shape the GujiyasRoll out each ball into a thin circle using a rolling pin. Place a spoonful of the prepared filling in the center of the circle. Moisten the edges with water and fold the circle in half, sealing the edges tightly to form a crescent shape.Use a fork to crimp the edges for a decorative finish.

Step 4: Fry or Bake Heat oil in a deep frying pan over medium heat. Once the oil is hot, gently slide in the prepared gujiyas and fry until they turn golden brown and crispy on both sides.You can also bake gujiyas in a preheated oven at 350 degrees Fahrenheit for 20 25 minutes.
