Easy Homemade Gulabi Thandai

Ingredients:
For Thandai Paste:
- 1/4 cup almonds, blanched and peeled
- 2 tablespoons of cashews 2 tablespoons of melon seeds (magaz)
- 1 tablespoon of poppy seeds (khus khus)
- 1 tablespoon fennel seeds (saunf)
- 1 tablespoon dried rose petals
- 1/2 teaspoon cardamom powder
- 1/4 teaspoon saffron strands
For Gulabi Thandai:
- 1 liter of milk 1/2 cup sugar (adjust to taste)
- 1/4 cup rose syrup Thandai paste (as prepared above)
- Ice cubes for serving
- Rose petals and chopped nuts for garnish.
Step 1: Blend almonds, cashews, pistachios, soaked poppy seeds, soaked melon seeds, dried rose petals, fennel seeds, cardamom powder, black pepper powder, saffron, and sugar into a smooth paste.
Step 2: Heat the milk in a saucepan, add the paste, and simmer for 5-7 minutes.
Step 3: Sweeten with sugar, add rose water, and remove from heat.
Step 4: strain, chill for 2-3 hours, then serve over ice cubes, garnished with rose petals.
