1. Ingredients

For the Stuffing:

- 6-8 large green chilies (mild to medium heat)

- 2 large potatoes, boiled and mashed

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- 1 tablespoon finely chopped fresh coriander

- 1 tablespoon lemon juice

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 teaspoon garam masala

- 1 teaspoon sugar (optional)

- Salt to taste

For the Batter:

- 1 cup gram flour (besan)

- 2 tablespoons rice flour (for extra crispiness)

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- 1/2 teaspoon carom seeds (ajwain)

- 1/2 teaspoon baking soda

- A pinch of baking powder

- Salt to taste

- Water (as needed)

2. Instructions

Step 1- Prepare the Chilies:

- Slit the green chilies lengthwise from one side, leaving the stem intact. Remove the seeds carefully to make room for the stuffing. Set aside.

- Heat a little oil in a pan. Add mustard seeds and cumin seeds. When they crackle, add the mashed potatoes.
