Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar (optional)
  • 1/8 teaspoon salt
  • 1 cup non-dairy milk (such as almond, soy, or oat milk)
  • 2 tablespoons vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract (optional)
  • Fresh fruit, maple syrup, or other toppings of your choice

Instructions

1. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, sugar (if using), and salt.

2. Add Wet Ingredients : Pour in the non-dairy milk, vegetable oil, and vanilla extract (if using). Stir until just combined; the batter should be slightly lumpy.
