Dahi vada, also known as dahi bhalla, is a popular Indian snack that's perfect for any occasion. Made from lentil fritters soaked in creamy yogurt and topped with tangy chutneys, it's a burst of flavors and textures in every bite. Here's a simple recipe to make delicious dahi vada at home:

Ingredients:

For the vada:

  • 1 cup urad dal (black gram lentils), soaked overnight
  • 2 green chilies, chopped
  • 1-inch piece of ginger, grated
  • Salt to taste
  • Oil for frying

For assembling:

  • 2 cups thick yogurt (curd/dahi)
  • 1 teaspoon cumin powder
  • 1 teaspoon red chili powder
  • Tamarind chutney
  • Green chutney
  • Chaat masala (optional)
  • Chopped coriander leaves for garnish

Instructions:

STEP 1- Prepare the Vada Batter: Drain the soaked urad dal and transfer it to a blender. Add green chilies, ginger, and salt. Blend into a smooth paste, adding a little water if necessary.

STEP 2 - Fry the Vadas: Heat oil in a deep frying pan. Take small portions of the batter and drop them into the hot oil using your fingers or a spoon. Fry until they turn golden brown and crispy.

STEP 3- Remove from the oil and drain excess oil on paper towels.

STEP 4- Soak the Vadas: Once the vadas are fried, transfer them to a bowl of lukewarm water. Let them soak for about 20-30 minutes. This helps to make the vadas soft and spongy.

STEP 5- Assemble the Dahi Vada: After soaking, gently squeeze out the excess water from the vadas and arrange them on a serving dish.

STEP 6- Add Yogurt: Whisk the thick yogurt until smooth and creamy. Pour the yogurt over the vadas, covering them completely.

STEP 7- Seasoning: Sprinkle cumin powder and red chili powder over the yogurt. Drizzle tamarind chutney and green chutney on top according to your taste preference.

STEP 8- Garnish and Serve: Garnish the dahi vadas with chopped coriander leaves and a sprinkle of chaat masala, if desired.

Chill and Enjoy: Place the assembled dahi vadas in the refrigerator for at least an hour to chill before serving. This allows the flavors to meld together. Serve chilled and enjoy the refreshing taste of dahi vada!
