Here's a simple recipe for Soya Kofta Curry:
1. Ingredients
For the Kofta:
- 1 cup soya granules
- 1 medium onion, finely chopped
- 1 green chili, finely chopped (optional)
- 1/2 cup boiled and mashed potatoes
- 1/4 cup finely chopped coriander leaves
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- Salt to taste
- 2 tablespoons all-purpose flour (or besan)
- Oil for frying
For the Curry:
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 1 teaspoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon red chili powder
- 1/2 cup yogurt (whisked)
- Salt to taste
- 1 cup water
- Fresh coriander leaves for garnish

Step 1- Prepare the Koftas:
1. Boil soya granules in water for 5 minutes, then drain and squeeze out excess water.
2. In a pan, heat a little oil and saut the finely chopped onions and green chili until golden brown.
3. In a mixing bowl, combine the soya granules, saut ed onions, mashed potatoes, coriander leaves, cumin seeds, turmeric powder, garam masala, red chili powder, salt, and all-purpose flour. Mix well to form a dough.
4. Shape the mixture into small balls or oval koftas.
5. Heat oil in a pan and fry the koftas until golden brown. Drain on paper towels.
Step 2- Prepare the Curry:
1. In a pan, heat oil and add cumin seeds. Once they splutter, add finely chopped onions and cook until golden brown.
2. Add ginger-garlic paste and cook for a minute until the raw smell disappears.
3. Stir in the tomato puree and cook until the oil separates from the masala.
4. Add turmeric powder, coriander powder, red chili powder, and salt. Cook for a couple of minutes.

8. Sprinkle garam masala and cook for an additional minute.
