Doodh Barfi is a delicious Indian sweet made from milk, sugar, and various flavorings. Here's a simple recipe to make this rich and creamy treat at home:

1. Ingredients

- 4 cups full-fat milk

- 1 cup sugar

- 1/2 cup milk powder

- 1/4 cup ghee (clarified butter)

- 1/2 teaspoon cardamom powder

- 2 tablespoons chopped nuts (almonds, cashews, or pistachios)

- 2 tablespoons grated coconut (optional)

- A pinch of saffron strands (optional)

2. Instructions

Step 1- Prepare Ingredients:

Measure out and prepare all ingredients. Chop the nuts and, if using saffron, soak it in a little warm milk.

Step 2- Heat Milk:

In a heavy-bottomed pan, bring the milk to a boil over medium heat, stirring continuously to prevent it from sticking to the bottom.

Step 3- Reduce Milk:

Once the milk starts boiling, reduce the heat to low and continue to cook, stirring frequently, until it reduces to about half its original volume.

Step 4- Add Milk Powder:

Add the milk powder to the reduced milk and mix well. Cook for a few minutes, stirring constantly, until the mixture thickens.

Step 5- Add Ghee and Sugar:

Stir in the ghee and sugar. Continue to cook, stirring frequently, until the mixture starts to leave the sides of the pan and thickens further. This should take around 10-15 minutes.

Step 6- Flavor the Barfi:

Add the cardamom powder, chopped nuts, and grated coconut (if using). Mix well. If using saffron, add it to the mixture at this stage.

Step 7- Set the Barfi:

Transfer the mixture to a greased plate or tray and spread it evenly. Let it cool for a few minutes. Once it starts to set but is still warm, cut it into pieces or squares.

Step 8- Cool and Serve:

Allow the barfi to cool completely and set at room temperature. Once fully cooled, it will firm up and be ready to serve.

Enjoy your homemade Doodh Barfi as a sweet treat or a festive dessert!
