Chicken Ghee Roast is a rich and flavorful South Indian dish known for its aromatic spices and the unique flavor of ghee. The dish features tender chicken cooked in a spicy and savory sauce made with ghee, spices, and sometimes yogurt. Here's a detailed recipe for making Chicken Ghee Roast:

1. Ingredients

For the Marinade:

- 500 grams (about 1 pound) chicken pieces (boneless or with bones)

- 1/2 cup plain yogurt (preferably full-fat or Greek yogurt)

- 1 tablespoon ginger-garlic paste

- 1 tablespoon red chili powder (adjust to taste)

- 1/2 teaspoon turmeric powder

- 1 teaspoon coriander powder

- Salt to taste

For the Roast:

- 3 tablespoons ghee (clarified butter)

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- 1/2 teaspoon fenugreek seeds (optional)

- 1/2 teaspoon black peppercorns

- 1-2 dried red chilies (adjust to taste)

- 1 large onion, finely chopped

- 1 tablespoon ginger-garlic paste

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to taste)

- 1 teaspoon coriander powder

- 1 teaspoon garam masala

- 1/2 cup water (or as needed)

- Fresh coriander leaves for garnish

- Lemon wedges for serving

2. Instructions:

Step 1- Marinate the Chicken:

- In a large bowl, combine the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, and salt.

- Mix well to coat the chicken evenly.

- Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.

Step 2- Prepare the Roast:

- Heat 3 tablespoons of ghee in a large pan or skillet over medium heat.

- Add mustard seeds, cumin seeds, fenugreek seeds (if using), black peppercorns, and dried red chilies. Let them splutter for a few seconds.

- Add the finely chopped onion and saut until it turns golden brown.

- Add the ginger-garlic paste and saut for another 2 minutes until the raw smell disappears.

- Add turmeric powder, red chili powder, coriander powder, and garam masala. Stir well for a minute to combine the spices with the onion mixture.

Step 3- Cook the Chicken:

- Add the marinated chicken to the pan, along with any marinade left in the bowl.

- Stir well to coat the chicken with the spice mixture.

- Cook over medium heat, stirring occasionally, until the chicken is cooked through and tender (about 15-20 minutes). Add water if needed to prevent the spices from burning and to help cook the chicken.

- Adjust the seasoning with salt and more red chili powder if desired.

Step 4- Finish and Serve:

- Once the chicken is cooked and the sauce has thickened to your desired consistency, garnish with fresh coriander leaves.

- Serve hot with lemon wedges on the side.

Enjoy your flavorful Chicken Ghee Roast!
