The mixture is shaped into cylindrical or oval forms and then cooked until they develop a crispy, golden-brown exterior while remaining tender and flavorful inside.

1. Ingredients
For the Kebabs:
- 1 cup mixed vegetables (carrot, beans, peas, corn), finely chopped or grated
- 1 cup paneer (Indian cottage cheese), crumbled
- 2-3 tablespoons besan (gram flour)
- 1 medium onion, finely chopped
- 2-3 green chilies, finely chopped (adjust to taste)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 2 tablespoons chopped fresh coriander leaves
- 1 tablespoon lemon juice
- Salt to taste
- 2-3 tablespoons oil for brushing
For Marination:
- 1/2 cup yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
2. Instructions
Step 1- Prepare the Vegetables:
- Boil or steam the mixed vegetables until tender. Drain and let them cool.
- Once cooled, mash or finely chop the vegetables.
Step 2- Prepare the Mixture:
- In a mixing bowl, combine the mashed vegetables, crumbled paneer, and besan.
- Add finely chopped onions, green chilies, ginger-garlic paste, and the spices (cumin seeds, coriander powder, garam masala, turmeric powder, red chili powder).
- Mix well. Adjust salt and spices as needed.
- Add fresh coriander leaves and lemon juice. Mix everything thoroughly.
- If the mixture is too soft, add more besan to bind it.
