- 1 cup paneer (Indian cottage cheese), crumbled

- 2-3 tablespoons besan (gram flour)

- 1 medium onion, finely chopped

- 2-3 green chilies, finely chopped (adjust to taste)

- 1 tablespoon ginger-garlic paste

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- 1 teaspoon garam masala

- 1 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 2 tablespoons chopped fresh coriander leaves

- 1 tablespoon lemon juice

- Salt to taste

- 2-3 tablespoons oil for brushing

For Marination:

- 1/2 cup yogurt

- 1 tablespoon ginger-garlic paste

- 1 teaspoon turmeric powder

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- 1 teaspoon red chili powder

- 1 teaspoon garam masala

- Salt to taste

2. Instructions

Step 1- Prepare the Vegetables:

- Boil or steam the mixed vegetables until tender. Drain and let them cool.

- Once cooled, mash or finely chop the vegetables.

Step 2- Prepare the Mixture:

- In a mixing bowl, combine the mashed vegetables, crumbled paneer, and besan.

- Add finely chopped onions, green chilies, ginger-garlic paste, and the spices (cumin seeds, coriander powder, garam masala, turmeric powder, red chili powder).

- Mix well. Adjust salt and spices as needed.

- Add fresh coriander leaves and lemon juice. Mix everything thoroughly.

- If the mixture is too soft, add more besan to bind it.

Step 3- Shape the Kebabs:

- Divide the mixture into small portions.

- Shape each portion into a cylindrical or oval shape, similar to traditional seekh kebabs.

- You can use skewers or your hands to shape them.

Step 4- Marinate:

- In a separate bowl, prepare the marinade by mixing yogurt with ginger-garlic paste and spices.

- Coat each kebab with the marinade. Let them marinate for at least 30 minutes to an hour.

Step 5- Cook the Kebabs:

- Preheat your oven to 200 C (390 F) or preheat a grill.

- Brush the kebabs lightly with oil.

- Place the kebabs on a baking tray or grill. Bake for 20-25 minutes, turning them occasionally and basting with more oil if needed. Alternatively, you can pan-fry them in a little oil until golden brown and crisp on all sides.

Step 6- Serve:

- Serve the veg seekh kebabs hot with mint chutney, yogurt sauce, and sliced onions and lemon wedges.

Enjoy your homemade veg seekh kebabs!
