1. Ingredients

- 1 medium-sized bottle gourd (lauki), peeled and grated

- 1-2 green chilies, finely chopped (optional)

- 1 tablespoon ginger, grated

- 1 tablespoon coriander leaves, chopped

- 1 cup besan (gram flour)

- 1 teaspoon cumin seeds

- 1 teaspoon garam masala

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- Salt, to taste

- Oil, for frying

For the Gravy:

- 1 tablespoon oil

- 1 medium onion, finely chopped

- 2 tomatoes, finely chopped or pureed

- 1 teaspoon ginger-garlic paste

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder

- 1/2 teaspoon garam masala

- Salt, to taste

- 1/2 cup water (adjust for desired consistency)

Prepare the Koftas:

Step 1- Prepare Bottle Gourd:

Squeeze the grated bottle gourd to remove excess water. This helps prevent sogginess in the koftas.
